Hood
A hood is the exhaust canopy over cooking equipment that captures heat, grease and smoke and moves them out of the kitchen. In the records we hold the term covers the hood, its duct and fan, and the suppression that serves it.

About Hood
Kitchen drawings show the hood's length and height above the cooking line, the duct route to the exterior, the fan and the suppression piping. Scope turns on the cooking equipment beneath it, because a solid-fuel or high-output range calls for a different hood and duct than a small appliance line. Hood records commonly appear with range, grease trap and walk-in cooler headings.
