Range

A range is a cooking appliance with its own burners or oven, recorded in commercial kitchens and in residential work. In the records we hold the term covers the appliance, its connection to gas or power, and the ventilation above it.

A kitchen plan locates the range, its clearance to combustible surfaces and the hood or exhaust that serves it. Scope is driven by whether the appliance is a straight swap or a change in fuel or capacity, because a larger or gas-fired unit affects the supply and the ventilation. Range records commonly appear with hood, oven and grease trap headings on the same commercial fit-out.
