GLOSSARY
Grease Trap
A grease trap, also written as a grease interceptor, is a chamber that catches fats, oils and solids before they reach the sewer. In the records we hold the term covers the device, its connections and the access for cleaning.

About Grease Trap
A plumbing plan shows the trap's location, its size relative to the fixtures it serves, the pipe runs in and out, and how it is vented and reached for cleaning. Scope is driven by the kitchen equipment it serves, since a larger cooking line needs a larger interceptor. Grease trap records commonly appear with hood, range and restaurant headings.
FLORIDA PERMIT DATA
In the records
"grease trap" appears in 774 matching permits in the Florida records we analyzed.
A permit can match more than one term, so these counts are not additive and adding two of them together overstates the total.
